Personen

- 10 Filets von Fera
- 250 g halbstarker Senf von Hugo Reitzel
- 250 g Semmelbrösel
- 2 Sträußchen Schnittlauch
- 300 g Butter (150 g für die Sauce)
- 25cl trockener Weißwein
- 150 g gehackte Schalotte
- 3 Esslöffel Fischfond
- 3 große Esslöffel Sahne
- Salz und Pfeffer aus der Mühle
- 5 Gläser Wasser

Wie man Zubereitung

Erhitzen Sie die Filets in einer Bratpfanne auf der Hautseite. Vom Herd nehmen und die Fleischseite mit Senf bestreichen. Mit Semmelbröseln und gehacktem Schnittlauch bestreuen und ein Stückchen Butter dazugeben. Beiseite legen.

In einem Topf den Weißwein, das Wasser, die Schalotte und den Fischfond einkochen. Mit Salz und Pfeffer würzen. Fügen Sie die Sahne, die Butter und den restlichen Senf hinzu. Reduzieren Sie, um eine glatte Sauce zu erhalten.

Geben Sie den Fisch für 5 Minuten in den Ofen.

Auf jedem Teller ein Filet anrichten und die Sauce daneben platzieren.

Mit Reis-Pilaf, gedämpften Kartoffeln oder Julienne-Gemüse servieren.
